- 250 g self-raising flour
- 1 tsp baking powder
- 30 g caster sugar
- 2 eggs
- 350 ml buttermilk
- 50 g butter, melted, plus more for the pan
- 8 rashers of streaky bacon
- maple syrup, to serve
Method
Crisp the bacon first
Cook the bacon until properly crisp and keep it warm. Doing it first means you can use the pan and its fat for the pancakes, which is the whole point of this combination.
10 minMix, badly
Whisk the dry ingredients, then stir in the eggs, buttermilk and melted butter until only just combined. Leave the lumps. Overmixed batter develops gluten and gives you flat, rubbery pancakes.
Rest the batter
Leave it 10 minutes. The flour hydrates and the raising agents get a head start, and you will see bubbles forming on the surface.
10 minCook on a medium heat
Wipe the pan with butter and cook ladlefuls until bubbles rise and burst across the whole surface and the edges look dry, then flip once. Only once — every flip after the first knocks the air out.
4 minStack and serve
Stack with the bacon between the layers and pour maple syrup over the top so it runs down through. Salt and sweet is the point; do not be shy with either.
