Ingredients
- 700 g cassava, peeled and finely grated
- 1 egg
- 3 garlic cloves, crushed
- ½ tsp aniseed or fennel seeds, crushed
- 1 tsp salt
- 500 ml vegetable oil, for frying
Method
Grate and squeeze
Grate the cassava finely, then squeeze out as much liquid as you can through a cloth. Grated cassava holds a surprising amount of water and every drop of it spits in the oil.
Bind lightly
Mix with the egg, garlic, aniseed and salt. Do not add flour: the cassava's own starch is the binder, and flour turns them heavy.
Fry small spoonfuls
Drop dessertspoons into 175°C oil and fry for three minutes until golden and lacy at the edges. Small and thin is right — a thick arepita is raw in the middle.
3 minSalt and eat standing up
Drain, salt again lightly and eat them hot. They go soft within ten minutes, which is why nobody has ever served them at a table.
