Ingredients

  • 3 large aubergines
  • 4 tbsp tahini
  • 2 garlic cloves, crushed to a paste
  • juice of 1 lemon
  • 3 tbsp olive oil
  • a handful of parsley, chopped
  • 1 tsp sumac
  • salt, to taste

Method

  1. Char the aubergines

    Blacken them whole directly over a gas flame or under a fierce grill, turning until the skin is burnt all over and they have collapsed. The smoke is the entire dish — an oven-roasted aubergine gives you a pleasant purée and nothing more.

  2. Drain

    Split them open and leave the flesh in a colander for twenty minutes. Aubergines hold a surprising amount of bitter water, and left in it the dip is thin and sour.

  3. Mix by hand

    Chop the flesh and beat in the tahini, garlic, lemon and salt with a fork. A food processor turns it into a pale, gluey emulsion — texture matters here.

  4. Finish

    Spread on a plate, pool olive oil in the middle, and scatter with parsley and sumac.
