Ingredients
- 450 g self-raising flour
- 440 ml beer, at room temperature
- 30 g sugar
- 1 tsp salt
- 60 g butter, melted
- 100 g mature cheddar, grated (optional)
Method
Mix the dry ingredients
Whisk the flour, sugar and salt together. The sugar is not for sweetness — it feeds the residual yeast in the beer and helps the crust colour.
Pour in the beer
Add the beer and the cheese if using and stir until only just combined. It will foam as the carbonation hits the flour, and that foam is doing the lifting, so work fast and do not beat it flat.
Butter on top, not in
Scrape into a lined 1 kg loaf tin and pour the melted butter over the surface. It sinks down the sides during baking and fries the crust — mixed into the batter it does nothing of the sort.
Bake
Bake at 180°C for 45 to 50 minutes until deep gold and a skewer comes out clean. A darker beer gives a maltier, denser loaf; a lager keeps it light.

Cool 15 minutes in the tin, then turn out. This is a soda-style bread with no keeping qualities at all — eat it the day it is made, ideally warm.
