- 250 g plain flour
- 2 tsp baking powder
- ½ tsp bicarbonate of soda
- 30 g caster sugar
- 350 ml buttermilk
- 2 eggs
- 50 g butter, melted, plus more for the pan
- maple syrup, to serve
- ½ tsp salt
Method
Whisk the dry
Whisk the flour, baking powder, bicarb, sugar and salt together thoroughly. The bicarb needs the buttermilk's acidity to work — this is why buttermilk pancakes rise higher than milk ones.
Combine the wet
Beat the buttermilk, eggs and melted butter together.
Fold, badly
Pour the wet into the dry and fold only until it just comes together. It should be lumpy. A smooth batter means developed gluten and flat, chewy pancakes.
Rest
Leave the batter to stand for ten minutes while the pan heats. The flour hydrates and the raising agents get going.
