Ingredients
- 200 g dark chocolate (70%), broken up
- 175 g butter
- 275 g caster sugar
- 3 large eggs
- 110 g plain flour
- 30 g cocoa powder
- 1 tsp vanilla extract
- ½ tsp flaky sea salt
Method
Melt
Melt the chocolate and butter together over a pan of barely simmering water, then let it cool for five minutes. Too hot and it scrambles the eggs.
8 minWhisk the eggs
Whisk the sugar, eggs and vanilla for a good three minutes until pale and thick with a ribbon trail. This is what gives brownies their papery crackled top — skip it and you get a dull matte surface.
3 minCombine
Fold the chocolate into the egg mixture, then sift over the flour and cocoa and fold just until combined.
Bake
Pour into a lined 20 x 30 cm tin, scatter with salt flakes and bake at 180°C until the edges are set but the middle still has a distinct wobble.
23 minCool completely
Leave in the tin until completely cold. Cutting a warm brownie gives you a delicious mess; cutting a cold one gives you brownies.
