Ingredients

  • 200 g dark chocolate, 70%, chopped
  • 4 eggs, separated
  • 60 g caster sugar
  • 150 ml double cream
  • a pinch of sea salt

Method

  1. Melt gently

    Melt the chocolate in a bowl over barely simmering water, not touching it, then cool for five minutes. A single drop of water in the bowl will seize the chocolate into a grainy paste with no way back.

  2. Yolks in

    Beat the yolks and salt into the warm chocolate one at a time. It will thicken and look alarmingly stiff — that is correct, and the whites will loosen it.

  3. Whisk the whites

    Whisk the whites to soft peaks, then add the sugar gradually and whisk to firm, glossy peaks. Whisked past this into dry, cottony peaks they will not fold in without deflating everything.

  4. Whip the cream separately

    Whip the cream to soft, floppy peaks — no further. Over-whipped cream makes a mousse that is heavy and slightly grainy.

  5. Fold in three goes

    Fold a third of the whites in hard to slacken the chocolate, then fold in the rest and the cream gently with a spatula, cutting down and lifting over. Stop the moment there are no white streaks left.

  6. Chill

    Spoon into glasses and chill at least four hours. It needs the full time to set properly, and it is better made the day before.
