Ingredients
- 1.2 kg floury potatoes, in even chunks
- 120 g butter
- 150 ml milk
- 100 ml double cream
- a grating of nutmeg
- salt, to taste
Method
Start in cold water
Put the potatoes in cold, well-salted water and bring to the boil. Dropping them into boiling water cooks the outsides to mush before the middles are done.

Drain thoroughly and return to the dry pan over a low heat for a minute to drive off moisture.
Warm the dairy
Heat the milk and cream together. Cold liquid seizes the starch and makes the mash gluey.
Rice, don't mash
Push the potatoes through a ricer or sieve, then beat in the butter first, before any liquid. Coating the starch in fat first is what keeps it silky.
Finish
Beat in the warm dairy a little at a time until you have the texture you want, then season hard with salt and nutmeg.
