Ingredients
- 200 g tagliatelle
- 300 g chestnut mushrooms, torn rather than sliced
- 30 g butter
- 2 garlic cloves, finely chopped
- a few sprigs of thyme, leaves picked
- 80 ml dry white wine
- 120 ml double cream
- 40 g parmesan, grated
- a handful of parsley, chopped
Method
Brown the mushrooms
Melt the butter in a wide pan and add the mushrooms in a single layer. Leave them alone until they have released their water and it has boiled off — only then will they brown. Salting early keeps them soggy.
8 minAdd aromatics
Stir in the garlic and thyme and cook for a minute until fragrant.
Deglaze and cream
Pour in the wine and scrape the base, letting it reduce almost away. Add the cream and simmer until it just coats a spoon.
4 minCook the pasta
Boil the tagliatelle until al dente and lift it into the sauce with some of its water.

Toss with the parmesan and parsley, loosening with pasta water until silky.
