Ingredients

  • 300 g fresh or frozen grated coconut
  • 1 tin evaporated milk
  • 350 g sugar
  • 2 cinnamon sticks
  • a thumb of ginger, sliced
  • a pinch of salt
  • 1 tsp vanilla extract
  • 50 g raisins — optional

Method

  1. Everything into a heavy pot

    Put the coconut, evaporated milk, sugar, cinnamon, ginger and salt into a heavy-based pot and bring it to a simmer. A thin pan will scorch this long before it thickens.

  2. Stir for half an hour

    Cook over medium-low heat, stirring almost continuously, for about thirty minutes. There is no shortcut and no walking away: sugar and milk on a hot base catch the moment you turn your back.

  3. Know when to stop

    It is ready when you can draw the spoon across the base and the trail stays open for a second before closing. Add the raisins in the last five minutes if using.

  4. Vanilla off the heat, then cool

    Stir in the vanilla away from the heat and spread it into a dish. It firms up as it cools; serve it at room temperature in spoonfuls, not slices.
