Ingredients
- 250 g self-raising flour
- 250 g Greek yoghurt
- 1 tsp salt
- 150 g passata
- 150 g mozzarella, torn
- 1 tsp dried oregano
- 1 tbsp olive oil
Method
Make a two-ingredient dough
Mix the flour, yoghurt and salt to a soft dough and knead for a minute on a floured surface. There is no yeast here, so there is nothing to wait for — the raising agent in the flour does the lifting in the pan.
Heat the pan
Roll or press the dough into two rounds the size of your largest frying pan. Wipe the dry pan with the oil and set it over a medium heat.
Cook the base
Lay a round in and cook until the underside is spotted brown and the top has puffed, then flip it and top the cooked side with passata, oregano and mozzarella.
3 minMelt the top
Cover with a lid or a sheet of foil and cook on a low heat until the cheese has melted and the second side is browned. The lid traps enough heat to do the job of a grill.
4 minServe
Slide out, cut, and cook the second one while the first is being eaten. It is at its best about a minute out of the pan.
