Ingredients
- 800 g shop-bought gnocchi
- 500 g cherry tomatoes
- 1 red onion, cut into wedges
- 4 garlic cloves, unpeeled
- 4 tbsp olive oil
- 1 tsp chilli flakes
- 150 g mozzarella, torn
- a handful of basil
- 1 tbsp balsamic vinegar
Method
Everything raw onto the tray
Toss the gnocchi straight from the packet — do not boil them — with the tomatoes, onion, unpeeled garlic, oil and chilli. Boiled first they turn to paste in the oven; raw, they crisp on the outside and stay pillowy inside.
Spread it out
Use the biggest tray you have and keep everything in one layer. Two trays are better than one crowded one, or the gnocchi steam instead of crisping.
Roast hot
Roast at 220°C for 22 minutes, shaking the tray once, until the gnocchi are golden and the tomatoes have burst.
22 minSquash the garlic in
Squeeze the roasted garlic out of its skins, mash it into the burst tomatoes with a fork, and scatter over the mozzarella. Back in for 5 minutes to melt.

Add the basil and a splash of balsamic. The acid is what stops it tasting like a plate of starch and cheese.
