Ingredients
- 100 g rolled oats
- 700 ml water
- 2 cinnamon sticks
- 300 ml milk
- 200 ml evaporated milk
- 120 g condensed milk, to taste
- 1 tsp vanilla extract
- a scrape of nutmeg
Method
Simmer the oats with cinnamon
Cook the oats in the water with the cinnamon sticks for ten minutes until soft and thick.

Blend until smooth and pass it through a sieve. Straining is what makes it a jugo rather than porridge — Dominicans drink this through a straw.
Milks in cold
Stir in the milk, evaporated milk and condensed milk. Adding them to the hot pot would thicken it further and you are trying to go the other way.
Chill hard
Add the vanilla and nutmeg, chill for a couple of hours and serve over ice. It thickens in the fridge, so keep a little water back to let it down.
