Ingredients
- 350 g macaroni
- 50 g butter
- 50 g plain flour
- 700 ml whole milk, warmed
- 250 g mature cheddar, grated
- 2 tsp English mustard
- a grating of nutmeg
- 50 g panko breadcrumbs
Method
Undercook the pasta
Boil the macaroni two minutes short of the packet time. It carries on cooking in the oven, and pasta cooked through now comes out mushy.
8 minMake the sauce
Melt the butter, stir in the flour and cook for two minutes so it loses its raw taste. Add the warm milk gradually, whisking, until smooth and thick enough to coat a spoon.
10 minAdd the cheese
Off the heat, stir in the cheddar, mustard and nutmeg. Taking it off the heat first stops the cheese splitting into oil and strings. Season well.
Combine
Fold the drained macaroni through the sauce and tip into a buttered dish. It should look slightly too saucy — it will tighten in the oven.
Bake
Scatter over the breadcrumbs and a little extra cheese and bake at 200°C until golden and bubbling at the edges.
