Mangú

Ingredients
- 4 green plantains
- 1.5 litres water, well salted
- 40 g butter, cold
- 2 red onions, sliced into rings
- 4 tbsp white vinegar
- 2 tbsp vegetable oil
- 1½ tsp salt
Method
Peel under water
Score the skin lengthways and peel the plantains under running water. Green plantain sap sets like glue on your hands and on the knife, and water is the only thing that stops it.
Boil in salted water
Cut into thirds and boil in well-salted water for twenty minutes, until a fork goes in with no resistance at all. Underdone plantain will not mash smooth however hard you work it.
20 minMash hot with cold water and butter
Mash immediately with the butter and a ladleful of the cooking water — cold water, splash by splash, if you want it truly silky. It must be done while hot; a cooled plantain turns rubbery and no amount of mashing recovers it.
Cebolla encurtida on top
Fry the onion rings briefly in the oil, take them off the heat and pour the vinegar over them. Spoon them over the mangú with all their liquid — the sharpness against the starch is the whole dish.
