Ingredients

  • 4 tbsp fish sauce
  • juice of 4 limes
  • 40 g palm sugar
  • 3 bird's eye chillies
  • 3 garlic cloves
  • a handful of coriander, stalks included

Method

  1. Pound, do not chop

    Pound the chillies and garlic with a pinch of salt in a mortar until broken down. Pounding ruptures the cells and releases far more heat and aroma than a knife does.

  2. Use the coriander stalks

    Add the coriander stalks and pound them in too, then chop the leaves and keep them back. The stalks carry more flavour than the leaves and would otherwise be thrown away.

  3. Balance the liquids

    Stir in the fish sauce, lime juice and palm sugar until the sugar dissolves. It should hit sour first, then salty, then sweet, then hot — and if any one of those dominates, adjust rather than accepting it.

  4. Rest, then finish

    Leave it 15 minutes for the garlic to mellow, then stir in the coriander leaves just before serving. Made too far ahead the herbs go black and the garlic turns harsh.
