Ingredients
- 100 g rolled oats
- 400 ml milk
- 200 ml water
- a good pinch of salt
- a little cream, to serve
- honey, to serve
Method
Start it cold
Put the oats, milk and water in the pan together and bring them up slowly. Oats dropped into already-hot liquid seize on the outside and stay chalky in the middle.
Salt early
Add the salt now rather than at the table. Salted from the start, porridge tastes of oats; salted at the end it just tastes salty.
Stir constantly
Keep it at a bare simmer and stir steadily for about 8 minutes. The stirring rubs starch off the oats and is the only thing making it creamy — there is no cream in it yet.
8 minJudge the thickness
Pull it off when it is a shade looser than you want to eat it. Porridge thickens noticeably in the 30 seconds between the pan and the bowl.
Serve
Pour into bowls and add a pool of cold cream and honey at the edge rather than stirring them through, so you get hot and cold in the same spoonful.
