Potato Salad

Ingredients
- 1 kg waxy new potatoes
- 2 tbsp white wine vinegar
- 150 g mayonnaise
- 80 g soured cream
- 1 tbsp dijon mustard
- 6 spring onions, sliced
- 4 gherkins, chopped
- a big handful of dill, chopped
- 3 eggs, hard-boiled and quartered
Method
Start in cold water
Put the potatoes whole, skins on, into cold salted water and bring them up to a simmer. Dropped into boiling water the outsides break up before the middles are done.
Dress them hot
Drain, halve or quarter them while still hot, and toss with the vinegar and a good pinch of salt. Hot potato absorbs the vinegar; cold potato just sits in it. This is the step that separates a good potato salad from a bland one.
Mix the dressing
Whisk the mayonnaise, soured cream and mustard together, and make it sharper than seems right — potatoes mute everything.
Fold when warm, not hot
Let the potatoes cool to just warm, then fold through the dressing with the spring onions, gherkins and dill. Fold it into scalding potatoes and the mayonnaise splits into oil.
Rest and finish
Leave 30 minutes for the flavours to settle and top with the quartered eggs. Better made a couple of hours ahead, and it keeps two days.
