Ingredients

  • 2 red onions, quartered
  • 1 green pepper
  • 1 red pepper
  • 12 garlic cloves
  • 6 culantro leaves
  • a large bunch of coriander
  • 1½ tbsp dried oregano
  • juice of 1 bitter orange, or 1 orange and 1 lime
  • 2 tbsp white vinegar
  • 4 tbsp olive oil
  • 1 tbsp salt

Method

  1. Chop before you blend

    Cut everything roughly by hand first. A blender given whole vegetables makes a watery froth; given chunks it makes a paste, and this should be a paste you can spoon.

  2. Blend with the acid and oil

    Blend everything to a coarse paste — visible flecks, not a smooth purée. The vinegar and citrus are also the preservative; this is why a Dominican sazón keeps for weeks where a Puerto Rican sofrito is frozen in cubes.

  3. Keep it in a jar under oil

    Store in a jar in the fridge with a film of oil on top; it keeps three weeks. Two tablespoons is a portion, and it is the shortcut behind every guiso in this collection.
