Ingredients
- 600 g carrots, coarsely grated
- 140 g red lentils
- 2 tsp cumin seeds
- a good pinch of chilli flakes
- 2 tbsp olive oil
- 1 litre hot vegetable stock
- 125 ml coconut milk
- a handful of coriander
- juice of half a lemon
Method
Toast the spices
Dry-toast the cumin and chilli in the pan until they smell nutty, then scoop out half to garnish and add the oil to the rest.

Add the grated carrot, lentils and stock. Grating rather than chopping the carrot is what gets this soup done in fifteen minutes instead of forty.

Blend roughly — a little texture suits this better than a perfectly smooth purée — then stir in the coconut milk.
Serve
Season, sharpen with lemon, and top with the reserved toasted spices and coriander.
