Ingredients
- 500 g mascarpone, at room temperature
- 4 egg yolks
- 4 egg whites
- 100 g caster sugar
- 300 ml strong espresso, cooled
- 4 tbsp marsala
- 300 g savoiardi (ladyfinger) biscuits
- cocoa powder, for dusting
Method
Prepare the soak
Mix the cooled coffee with the marsala in a shallow dish. It must be cold — warm coffee turns the biscuits to sludge instantly.
Beat the yolks
Whisk the yolks with the sugar until pale, thick and tripled in volume.
5 minFold in the mascarpone
Beat the mascarpone briefly to loosen, then fold it into the yolks. Overbeating mascarpone splits it into a grainy mess that will not come back.
Whip and fold the whites
Whisk the whites to soft peaks and fold them through in three additions, keeping as much air as you can.
Layer
Dip each biscuit in the coffee for barely a second a side — they keep absorbing long after they leave the liquid. Layer biscuits and cream twice.
Chill
Cover and refrigerate for at least six hours, ideally overnight. Dust heavily with cocoa only just before serving, or it goes damp and patchy.
