Ingredients
- 8 good pork sausages
- 140 g plain flour
- 4 eggs
- 250 ml whole milk
- 2 tbsp vegetable oil or beef dripping
- 1 red onion, sliced
- a few sprigs of thyme
- 1 tbsp wholegrain mustard
Method
Make the batter
Whisk the flour, eggs, milk, mustard and a good pinch of salt to a smooth batter about the thickness of single cream.
Rest it
Rest for at least 30 minutes at room temperature. A cold batter poured into hot fat rises far less — this is the most common reason toad in the hole comes out flat.
30 minGet the tin screaming hot
Put the oil, sausages, onion and thyme in a roasting tin at 220°C and cook until the sausages are browned and the fat is smoking. This takes a good 20 minutes and both things matter: browned sausages and violently hot fat.
20 minPour and shut
Pour the batter around the sausages in one go and shut the oven immediately. It should hiss as it lands. Do not open the door for at least 25 minutes.
Bake
Bake for 30 to 35 minutes until dramatically risen, deep brown and crisp at the edges. Pale batter collapses on the way to the table, so give it the full time.

It starts to sink within a couple of minutes, so bring the tin straight to the table with onion gravy.
