Ingredients
- 160 g tinned tuna, drained well
- 60 g mayonnaise
- 2 spring onions, finely sliced
- 30 g gherkins, finely chopped
- 120 g mature cheddar, grated
- 4 slices of sourdough
- 30 g softened butter
- 1 tsp Dijon mustard
Method
Mix the filling
Fork the tuna together with the mayonnaise, spring onion, gherkins and mustard. Drain the tuna properly first — wet filling steams the bread from the inside.
Season
Taste and season with plenty of black pepper. Gherkins and cheese bring the salt.
Build
Butter the bread on the outside, then fill with the tuna and cheddar, keeping the cheese against both slices so it glues the sandwich shut.
Fry low
Cook in a dry pan over a medium-low heat, pressing gently, until deep golden on both sides and the cheese has melted through. Too hot and the outside burns before the middle melts.
