Tuna Pasta Bake

Ingredients
- 400 g fusilli or penne
- 2 tins of tuna, drained
- 50 g butter
- 50 g plain flour
- 700 ml whole milk
- 180 g mature cheddar, grated
- 2 tsp english mustard
- 150 g frozen peas
- 150 g sweetcorn
- 6 spring onions, sliced
- 50 g breadcrumbs
- zest of 1 lemon
Method
Seriously undercook the pasta
Boil the pasta three minutes short of al dente. It carries on cooking in the sauce in the oven, and pasta boiled properly first comes out of the bake as mush.
8 minMake the sauce
Melt the butter, cook the flour for two minutes, then add the milk gradually, beating smooth after each addition. Make it looser than seems right — the pasta will drink a surprising amount as it bakes.
10 minCheese off the heat
Take the pan off the heat before stirring in two-thirds of the cheddar and the mustard. Boiled, the cheese sauce turns stringy and the fat separates out into an oily film.
Combine
Fold together the pasta, sauce, tuna, peas, sweetcorn, spring onions and lemon zest. Flake the tuna in large pieces and fold gently — stirred hard it disappears into paste. The lemon zest is what stops the whole thing tasting flat and beige.
Top and bake
Tip into a dish, scatter the remaining cheese mixed with the breadcrumbs, and bake at 200°C until bubbling at the edges and browned on top.
