Ingredients

  • 600 g cod or haddock, in strips
  • 120 g plain flour
  • 180 ml cold lager
  • 2 tsp smoked paprika
  • 250 g red cabbage, very finely shredded
  • 3 limes
  • 100 g mayonnaise
  • 1 tbsp chipotle in adobo
  • a handful of coriander
  • 12 corn tortillas
  • oil, for frying

Method

  1. Make the slaw

    Mix the mayonnaise with the chipotle and the juice of one lime, and toss through the cabbage. Salt it and leave to sit — it softens slightly but keeps its crunch.

  2. Mix the batter

    Whisk the flour, paprika and a big pinch of salt with the cold beer until just combined. Lumps are fine. Cold beer and a light hand are what make the batter crisp rather than bready.

  3. Coat the fish

    Pat the fish dry, season, and dip each strip into the batter, letting the excess run off.

  4. Fry

    Fry in 180°C oil in small batches until deep golden and crisp. Crowding drops the oil temperature and the batter turns greasy.

    Warm the tortillas, then layer slaw, fish and coriander, with lime wedges to squeeze over.
