- 2 ripe avocados
- 4 very fresh eggs
- 2 thick slices of sourdough
- juice of half a lemon
- a pinch of chilli flakes
- 1 tbsp vinegar, for the poaching water
- 1 tbsp olive oil
- flaky sea salt
Method
Toast
Toast the sourdough well — it has to hold up under wet avocado and a poached egg without going limp.
Poach the eggs
Bring a deep pan of water to a bare simmer with the vinegar. Crack each egg into a small sieve first to drain off the loose white, then slide it in. That sieve trick is the difference between a neat egg and a cloud of shreds.
3 minCrush the avocado
Roughly crush the avocado with the lemon juice and plenty of salt. Crush, do not blend — texture is most of what makes this worth eating.
Assemble
Spread the avocado thickly, top with the drained eggs, and finish with oil, chilli flakes and flaky salt.
