- 3 eggs
- 60 g good ham, torn into pieces
- 50 g gruyere, grated
- 20 g butter
- a few chives, sliced
Method
Beat and season
Beat the eggs until completely uniform with a pinch of salt. Go easy — the ham and gruyere are both salty and this is the point where most people overdo it.
Foaming butter, medium heat
Melt the butter until it foams but has not coloured. Hotter than that and the base browns and toughens before the top has set at all.
Stir, then stop
Pour in the eggs, stir briskly for 20 seconds to make soft curds, then leave it alone and scatter the ham and cheese over one half while the top is still glossy. Adding the filling to a fully set omelette means the cheese never melts.

Fold the empty half over, slide onto a plate, and let it sit for 30 seconds so the residual heat finishes the cheese. Scatter with chives.
