Ingredients
- 320 g strong white flour
- 3 g fast-action dried yeast
- 8 g salt
- 180 g passata
- 1 tsp dried oregano
- 180 g mozzarella, torn and drained
- 100 g salami, sliced thin
- 1 tsp chilli flakes
- 1 tbsp honey, to finish
Method
Mix and knead
Bring the flour, yeast, salt and 200 ml cool water together, then knead until smooth and springy.

Cover and prove until doubled, around 2 hours at room temperature.
2 hHeat the oven
Get a stone or heavy tray screaming hot — maximum heat, at least 30 minutes. Domestic ovens need the full soak or the base stays pale.
30 minSeason the sauce
Stir the oregano and a pinch of salt through the passata. Use it raw and cold; cooking it first only drives off the freshness before the oven gets a chance to.
Top and bake
Stretch the dough, spread the sauce thinly, then mozzarella, then the salami and chilli flakes. Bake until the salami edges curl into little cups holding orange fat.
