Tostones

Ingredients
- 3 green plantains
- 500 ml vegetable oil, for frying
- 500 ml water, for the dip
- 3 garlic cloves, crushed, for the dip
- 2 tsp salt
Method
Cut thick
Peel the plantains under water and cut them into 2 cm rounds. Thin slices fry into crisps; tostones need enough middle left to stay soft after the second fry.
First fry, gentle
Fry at about 160°C for five minutes until pale gold and yielding, then lift out onto paper. They should not colour much yet.
5 minSmash, then dunk in garlic water
Flatten each round to about 1 cm with the base of a glass, then dip it briefly in the salted garlic water and shake it off. The water is the Dominican step most recipes skip: it seasons the inside and steams the crust from within on the second fry.
Second fry, hot
Raise the oil to 190°C and fry again for two to three minutes until deep gold and blistered. Salt them the moment they come out and serve immediately — a tostón is only itself for about five minutes.
