Ingredients
- 8 green bananas (guineítos verdes)
- 2 tsp salt
- 4 tbsp olive oil
- 2 red onions, in rings
- 4 garlic cloves, sliced
- 2 bay leaves
- 100 ml white vinegar
- a handful of green olives
- black pepper
Method
Boil them in their skins
Trim the ends, slit the skins lengthways and boil the green bananas whole for about twenty minutes. Boiling them in the skin keeps them from going waterlogged and makes them far easier to peel afterwards.
20 minPeel and slice while warm
Peel them under cold running water and cut into thick diagonal slices.
Make the escabeche
Warm the oil with the onions, garlic and bay until the onions are limp but still have bite.
6 minVinegar off the heat
Take the pan off the heat before adding the vinegar, olives and pepper. Boiling vinegar drives off exactly the sharpness the dish exists for.
Leave it a few hours
Pour over the bananas and leave at room temperature for two hours, turning once. It is better the next day and keeps a week in the fridge — this is a dish that improves while you ignore it.
