Ingredients
- 3 small cucumbers
- 4 firm tomatoes
- 1/2 red onion
- a big handful of parsley
- a small handful of mint
- juice of 2 lemons
- 3 tbsp good olive oil
- 1 tsp sumac (optional)
Method
Cut everything small and even
Dice the cucumber, tomato and onion into pieces no bigger than 5 mm. The fineness of the dice is not a garnish detail — it is what the salad is judged on, and it is why every mouthful tastes of everything at once.
Seed the tomatoes
Scrape out the watery seed jelly before dicing, and use firm tomatoes rather than very ripe ones. Otherwise the bowl floods within minutes.
Chop the herbs coarsely
Chop the parsley and mint just before mixing. Chopped early, herbs blacken and go limp.
Dress at the table
Toss with the lemon juice, oil, salt and sumac immediately before serving. Salt draws water out of cucumber fast, so a salad dressed even 20 minutes ahead sits in a pool.
