Panzanella

Ingredients
- 250 g stale sourdough, torn into chunks
- 600 g very ripe tomatoes, cut into wedges
- 1 red onion, sliced paper thin
- 1 cucumber, deseeded and sliced
- 5 tbsp olive oil
- 2 tbsp red wine vinegar
- 25 g capers, rinsed
- a large handful of basil
- salt, to taste
Method
Dry the bread
If the bread is fresh, tear it and leave it out for an hour or crisp it briefly in a low oven. Fresh bread dissolves into mush the moment it meets the dressing.
Salt the tomatoes
Toss the tomato wedges and onion with a good pinch of salt and leave for ten minutes. The juice they give up is the most important part of the dressing.

Add the oil, vinegar, capers and cucumber to the tomatoes and their juices, and stir.
Combine and wait
Fold in the bread and basil and leave for twenty minutes before serving, so the bread drinks the dressing but keeps some bite.
