Pico de Gallo

Ingredients
- 500 g ripe tomatoes
- 1/2 red onion, finely diced
- 2 jalapeños, finely chopped
- a big handful of coriander, chopped
- juice of 2 limes
- 1 tsp salt
Method
Seed the tomatoes
Quarter the tomatoes, scrape out the watery seed jelly, and dice the flesh. Leave the seeds in and you get a bowl of pink water with some tomato floating in it.
Take the edge off the onion
Dice the onion and rinse it briefly under cold water, then pat dry. Thirty seconds of rinsing removes the sulphurous burn that otherwise dominates everything.
Mix and salt
Combine everything with the lime juice and salt. Cut all the pieces to roughly the same small size — this is eaten on a chip, so nothing should need a second bite.
Eat within the hour
Leave 15 minutes for the salt to draw the flavours together, then serve. It gets progressively wetter as it sits, so it is genuinely a make-and-eat dish, not a make-ahead one.
