Salted Lassi (Chaas)

Ingredients
- 400 g natural yoghurt
- 600 ml cold water
- 2 tsp cumin seeds
- a handful of mint leaves
- 1 small green chilli (optional)
- 1 tsp black salt (kala namak), or sea salt
- 10 g ginger
Method
Whisk before you dilute
Whisk the yoghurt smooth on its own first, then add the water gradually. Water poured onto unwhisked yoghurt leaves lumps that no amount of blending afterwards removes.
Toast and grind the cumin
Toast the cumin seeds in a dry pan until they darken and smell nutty, then grind them. Raw ground cumin tastes dusty; toasted, it is the defining flavour of the drink.
2 minBlend with the aromatics
Blend everything with the mint, chilli, ginger, black salt and most of the cumin until frothy. Black salt is worth seeking out — its sulphurous tang is what makes chaas taste like chaas rather than salty yoghurt.
Serve very cold
Pour over ice and dust with the remaining cumin. It separates as it stands, so whisk again if it has been sitting. Best drunk against something fiery.
