Wasakaka

Ingredients
- 8 garlic cloves
- 1 tsp salt
- juice of 3 limes
- juice of 1 bitter orange, or 1 orange
- 100 ml olive oil
- a small handful of parsley, chopped
- 1½ tsp dried oregano
Method
Pound the garlic with salt
Crush the garlic to a paste with the salt in a mortar. The salt is abrasive and does the work; a garlic press gives you juice and lumps instead.
Citrus, then oil
Stir in the lime and orange juice, then whisk in the oil. It will not emulsify properly and it is not supposed to — wasakaka is meant to separate and be stirred again at the table.
Rest it twenty minutes
Add the parsley and oregano and leave it to sit. Straight away it is aggressive; after twenty minutes the garlic softens into something you can pour over a whole grilled chicken.
