Ingredients
- 800 g watermelon, in bite-sized cubes
- 200 g feta, in rough chunks
- a big handful of mint leaves
- 1/2 red onion, sliced paper-thin
- juice of 2 limes
- 3 tbsp olive oil
- plenty of black pepper
Method
Drain the watermelon
Cube the watermelon and leave it in a colander for 10 minutes. It sheds a surprising amount of juice, and left in, that juice turns the whole plate into a pink puddle.
10 minSoften the onion
Scrunch the sliced onion with the lime juice and a pinch of salt and leave it while you do everything else. It loses its raw burn and turns pink.
Crumble, do not dice
Break the feta into irregular chunks with your fingers rather than cubing it, and tear the mint. Ragged edges look better and catch more dressing.
Assemble at the last minute
Layer everything on a platter, spoon over the lime-and-onion mixture and the oil, and grind pepper on. No salt — the feta brings plenty. Serve immediately; it will not wait ten minutes.
